Easy Chicken & Veggie Soup

This chicken and veggie soup ticks all the boxes, with a combination of veg that makes sure you’re getting a wide range of nutrients, healthy fats from the EVOO, and protein from the chicken. Tastes like a warm hug, and your brain will love you for it.

Ingredients

  • 2-3 cups roasted chicken, shredded
  • 8 cups of chicken stock or broth
  • 4 large celery stalks, finely chopped
  • 3 small carrots, finely diced
  • 1 cup mushrooms, chopped
  • 2 cups of kale, finely chopped
  • 1 leek, finely chopped
  • ½ lemon
  • Extra virgin olive oil
  • Salt and pepper to season
  • Optional: 1 cup pasta of your choice

Method:

  1. Chop celery
  2. Dice carrots
  3. Chop mushrooms
  4. Finely chop leek and kale
  5. In a large pot, add EVOO and lightly cook leeks for a few minutes
  6. Add in finely chopped raw celery and carrot for a further 10 minutes until soft
  7. Pour in chicken stock/broth and give it a gentle stir
  8. Add in chopped mushrooms and chopped kale. Simmer for 10 minutes
  9. Add in pasta and shredded chicken for a further 8 minutes until pasta is cooked through
  10. Add a squeeze of lemon juice, season with salt and pepper and then it is ready to serve
  11. Garnish with parsley and grated parmesan
