Mediterranean-Inspired Nourish Bowl

Ingredients

  • 2 salmon fillets
  • 2 cups cous cous
  • ¼ cup sunflower seeds
  • ¼ cup pepitas
  • ½ cup toasted, slivered almonds
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp cinnamon
  • 1 sweet potato, diced
  • 1 avocado, halved and sliced
  • ½ cup kalamata olives
  • ½ orange, zest and juice
  • 4-5 tbsp hummus
  • Leafy greens (spinach or kale)
  • ½ cup parsley
  • Olive oil
  • 1 chilli diced
  • ½ cup vegetable broth

Method:

  1. Coat potato in a little olive oil, salt and pepper and roast in a 180 degree oven for 25 minutes or until golden brown.
  2. Cook cous cous to packet instructions in vegetable broth. Once cooked, stir through cumin, coriander, cinnamon, 1 tsp salt, pepper, orange zest, seeds and nuts, and orange juice
  3. Cook salmon in pan until done to your liking (approx 4 minutes skin-side-down, flip, and then another 3 or so minutes more)
  4. Divide cous cous mixture, roasted vegetables, olives, avocado, hummus and salmon into bowls
  5. Top with parsley and chilli if desired
