Ingredients:

For the salad

  • 1/4 head green cabbage, diced small ⁠
  • 4 baby cucumbers, diced small⁠
  • 1/4 cup chives, finely chopped ⁠
  • 3 spring onions, finely chopped ⁠

 

For the dressing

  • ½ bunch basil
  • 1 cup baby spinach⁠
  • 2 cloves garlic, peeled⁠
  • 1 shallot, peeled ⁠
  • 2 lemons, juiced⁠
  • 1/4 cup extra virgin olive oil⁠
  • 1/4 cup cashews⁠
  • 1 tsp sea salt⁠
  • 1 tbsp rice wine vinegar⁠
  • ½ avocado⁠
  • 30g parmesan
  • 1 tsp chilli flakes⁠

 

To serve

  • 1 packet corn chips⁠

 

Method:

  1. Combine all of the salad ingredients in a large bowl
  2. To make the dressing, place all of the ingredients in a blender or food processor. Blend until smooth
  3. Pour the dressing over the salad and toss to evenly coat
  4. Serve with corn chips for dipping
